Owner, Mée Wolff, was asked to submit her favourite dish to appear in the ‘Cooking-on-Sea’ charity recipe book.

Mée chose Thai Grilled Fresh Sea Bass as it’s her favourite dish to make for herself when she’s in the restaurant. It’s easy to Cook, healthy and can be a light lunch or a filling dinner. Have a go and try making this delicious recipe yourself!

Ingredients (Serves 2):
500g Sea Bass
2 Sticks Lemongrass
For the dipping sauce:
2 Cloves Garlic
2 Fresh Chillies
2-4 tbsp Lime Juice
2-4 tbsp Fish Sauce
1 tsp Sugar
Fresh Coriander, Chopped

Method:
1. Slash both sides of the Sea Bass diagonally, crush the Lemongrass and stuff in to the fish, then grill for 7-10 mins on each side until cooked through.
2. For the sauce, crush the Garlic, Chilli and Coriander with a mortar and pestle, then transfer to a bowl and mix witht eh sugar, lime juice and fish sauce.
3. Place the fish on a plate with an oriental salad, rice or bread with the dipping sauce on the side.

Tip:
Make this with a salad for a lighter lunch or with rice and oriental vegetables for a more filling evening meal.
